  1. Prepare a mutton broth (fond de cuisine) according to classical technique. Clarify it thoroughly and degrease it completely.
  2. Cut the mutton breast meat that was used in preparing the broth into large dice. Cook pearl barley until tender. Cut green beans into diamond shapes (losanges). Prepare a coarse brunoise (brunoise / fine vegetable dice) of mixed vegetables.
  3. Combine the clarified, degreased broth with the diced mutton, cooked pearl barley, diamond-cut green beans, and add one tablespoon of the brunoise per liter of consommé. Serve hot.
