  1. This is a type of acéto-dolce (sweet-and-sour preserve), composed of various fruits such as grapes, plums, apricots, small onions, and cornichons, all prepared in spiced vinegar sweetened with sugar and cinnamon, and heightened with Cayenne pepper.
  2. As an accompaniment to this hors-d'œuvre, serve small cinnamon biscuits. It is customary to leave this dish on the table throughout the service.
