Oysters English Style

Instructions

  1. Open the oysters and detach them from their shells.
  2. Wrap each oyster in a very thin slice of bacon. Thread them onto small metal skewers or brochettes à anneaux (ring skewers), season with salt and pepper, and grill until the bacon is cooked.
  3. Dress the skewers on toast made from grilled bread, cut to match the length and shape of the brochettes. Sprinkle lightly with bread crumbs or fried breadcrumbs ("bread Crump" or mie de pain frite), then dust lightly with cayenne pepper.
