Instructions

  1. Press the currants and raspberries through a sieve set over a terrine.
  2. Add to the juice half a litre of filtered water, 180 grammes of loaf sugar and a piece of washed ice.
  3. Keep it cool 20 minutes, stirring from time to time with a silver spoon so the sugar dissolves.
  4. It should read the same degree as the Eau de Cerises — 9 on the syrup gauge.
