Blanc-Manger à l’Anglaise (English-Style Cornflour Blancmange)

Ingredients

Instructions

  1. Boil the litre of milk with the 125 grammes of sugar.
  2. Slake the 125 grammes of corn-flour with the 2 and a half decilitres of cold milk.
  3. Pour the boiling milk onto the slaked corn-flour, stirring briskly.
  4. Work the composition with the whisk until smooth, then cook it over full heat for a few minutes, stirring without stopping.
  5. Take it off the fire and flavour it at will.
  6. Moisten the moulds with light syrup, then pour in the composition while very hot.
  7. Let it set and serve very cold, plain or with a fruit compote.
