Terrapène à la Baltimore (Terrapin, Baltimore Style)

Instructions

  1. Heat one litre of prepared terrapin in a bain-marie, then drain it and reserve the cooking liquid.
  2. Throw the pieces into 60 grammes of Beurre noisette, season with salt and pepper from the mill, and sauté them for 2 minutes.
  3. Add the reserved cooking liquid and bring to the boil.
  4. Thicken with a spoonful of fécule slaked in cold water, rolling the pan on the stove.
  5. Finish with 2 spoonfuls of Xérès and serve in silver cassolettes, or in porcelain vessels shaped like a turtle.
