Terrapène à la Baltimore (Terrapin, Baltimore Style)

Ingredients
- 1 litre terrapin
- 60 grammes Beurre noisette
- Salt
- Pepper from the mill
- 1 spoonful fécule
- Cold water
- 2 spoonfuls Xérès (sherry)
Instructions
- Heat one litre of prepared terrapin in a bain-marie, then drain it and reserve the cooking liquid.
- Throw the pieces into 60 grammes of Beurre noisette, season with salt and pepper from the mill, and sauté them for 2 minutes.
- Add the reserved cooking liquid and bring to the boil.
- Thicken with a spoonful of fécule slaked in cold water, rolling the pan on the stove.
- Finish with 2 spoonfuls of Xérès and serve in silver cassolettes, or in porcelain vessels shaped like a turtle.
