  1. Make the Duchesses like the Carolines, in choux paste without sugar, of the size of a chou for Saint-Honoré.
  2. Fill them from the bag with a fine purée of crayfish.
  3. Glaze them with pink jelly, without coating them in Chaud-froid sauce.
