Tournedos Montgomery (on Spinach Pancakes, with a Soubise Rosette)

Ingredients

• tournedos
• spinach pancakes
• Soubise purée
• truffle

Instructions

1. Cook a spinach pancake in a tartlet mould for each tournedos.
2. Sauté the tournedos and set each one on a pancake.
3. Decorate each tournedos with a fluted rosette of very thick Soubise purée.
4. Place a slice of truffle in the middle of the rosette.
