Consommé à la Rothschild (Game Consommé with Pheasant Fumet and Sauterne)

Instructions

  1. Prepare a game Consommé with pheasant fumet.
  2. Add 1 half-décilitre of reduced Sauterne wine for each litre of Consommé.
  3. Make a royale of equal parts pheasant purée, chestnut purée and pheasant salmis sauce, and cut it into medium fluted rounds.
  4. Cut the ortolan fillets into julienne, and the truffle into a fine julienne.
  5. Garnish the Consommé with the royale and the two juliennes.
