Bouchées Montglas (Puff Pastry Cases with Foie Gras and Truffle Salpicon)

Ingredients

Instructions

  1. Shape the bouchée cases as fluted squares.
  2. Cut a salpicon of foie gras, mushrooms, scarlet tongue and truffles.
  3. Bind it with an excellent sauce Demi-glace with Madeira.
  4. Fill the bouchées with the salpicon.
  5. Cut slices of truffle into squares and set one on each as a lid.
