Œufs à l'Anglaise (Eggs English Style)

Ingredients
- On the dish:
- eggs
- crumb-bread (pain de mie) for toasts
- thickened veal gravy
- Poached or soft-boiled:
- eggs
- round or oval toasts
- grated Chester (Cheshire) cheese
- Cayenne pepper
- Beurre noisette
Instructions
- On the dish: cook the eggs in the pan and cut each one out with a plain round cutter.
- Grill rounds of crumb-bread to the same size and set an egg on each.
- Send thickened veal gravy separately.
- Poached or soft-boiled: set the eggs on round or oval toasts.
- Mix grated Chester with a point of Cayenne and sprinkle it over the eggs.
- Moisten lightly with Beurre noisette and glaze in a hot oven.
