Instructions

  1. On the dish: cook the eggs in the pan and cut each one out with a plain round cutter.
  2. Grill rounds of crumb-bread to the same size and set an egg on each.
  3. Send thickened veal gravy separately.
  4. Poached or soft-boiled: set the eggs on round or oval toasts.
  5. Mix grated Chester with a point of Cayenne and sprinkle it over the eggs.
  6. Moisten lightly with Beurre noisette and glaze in a hot oven.
