Punch Marquise (Sauternes and Cognac Punch)

Ingredients
- litre Sauternes
- grammes lump sugar
- lemon zest, pinned with a clove
- decilitres cognac
- Thin slices of lemon, to serve
Instructions
- Put a litre of Sauternes, 250 grammes of lump sugar and a lemon zest pinned with a clove into a copper pan.
- Dissolve the sugar, then heat the wine until it covers itself with a fine white foam.
- Remove the zest and the clove, and pour the wine into a punch bowl.
- Add 2 and a half decilitres of flamed cognac, set it alight, and let it burn right out.
- Serve with a thin slice of lemon in each glass.
