Punch Marquise (Sauternes and Cognac Punch)

Ingredients

Instructions

  1. Put a litre of Sauternes, 250 grammes of lump sugar and a lemon zest pinned with a clove into a copper pan.
  2. Dissolve the sugar, then heat the wine until it covers itself with a fine white foam.
  3. Remove the zest and the clove, and pour the wine into a punch bowl.
  4. Add 2 and a half decilitres of flamed cognac, set it alight, and let it burn right out.
  5. Serve with a thin slice of lemon in each glass.
