- Clear chicken Consommé
- Chicken farce
- Lettuce
- Chervil
- Profiteroles
Instructions
- Prepare a clear chicken Consommé.
- Make small quenelles of chicken farce.
- Garnish the Consommé with the quenelles, a chiffonnade of lettuce and pluches of chervil.
- Serve separately small profiteroles the size of a hazelnut, kept nicely crisp.
