Saddle of Roe Deer with Cherries (Selle de Chevreuil aux Cerises)

Ingredients

Instructions

  1. Keep the saddle for 12 hours in a verjuice marinade.
  2. Soak the half-sugared cherries in hot water half an hour in advance.
  3. Roast the saddle on the spit, basting it with the marinade, and keep it well pink.
  4. Make the cherry sauce with equal parts sauce Poivrade and redcurrant jelly, adding 20 grammes of the cherries per litre.
  5. Arrange the saddle and serve the sauce at the same time.
