Mandarines Givrées (Frosted Mandarins Filled with Mandarin Ice)

Instructions

  1. Cut round the top of each mandarin with a plain round cutter, leaving the stalk with 2 leaves still attached to it; keep the cut round.
  2. Empty out the segments and with them prepare a glace à la mandarine by the method given under « Compositions pour Glaces aux fruits ».
  3. Fill the mandarins with the ice and cover each with the round that was cut off.
  4. With a brush, throw a fine rain over the peel of the fruit.
  5. Put the mandarins at once into a strongly packed cooler.
  6. As soon as the peel is covered with a coat of frost, arrange them on a napkin and serve immediately, as the frost melts very quickly.
