Blinis (Russian Yeast Pancakes)

Ingredients

Instructions

  1. Make a soft paste with 30 grammes of yeast slaked in half a litre of tepid milk and 50 grammes of sifted flour.
  2. Let it ferment for 2 hours in a warm place.
  3. Add 250 grammes of flour, 4 egg yolks, a pinch of salt and 3 décilitres of tepid milk, mixing well without letting the batter take body.
  4. Finish with 4 whipped egg whites and let it rise for half an hour.
  5. At the moment of serving, cook the Blinis quickly, like pancakes, in small special pans.
