Blinis (Russian Yeast Pancakes)

Ingredients
- 30 grammes yeast
- half a litre tepid milk
- 50 grammes sifted flour
- 250 grammes flour
- 4 egg yolks
- a pinch of salt
- 3 décilitres tepid milk
- 4 egg whites
Instructions
- Make a soft paste with 30 grammes of yeast slaked in half a litre of tepid milk and 50 grammes of sifted flour.
- Let it ferment for 2 hours in a warm place.
- Add 250 grammes of flour, 4 egg yolks, a pinch of salt and 3 décilitres of tepid milk, mixing well without letting the batter take body.
- Finish with 4 whipped egg whites and let it rise for half an hour.
- At the moment of serving, cook the Blinis quickly, like pancakes, in small special pans.
