Coupes d'Antigny (Alpine Strawberry Ice with Peach and Spun Sugar)

Ingredients
- ice of Alpine strawberries
- raw cream
- half peaches poached in vanilla syrup
- spun sugar
Instructions
- Add very light, very fragrant raw cream to an ice of Alpine strawberries (or of quatre-saisons strawberries if there are none).
- Fill the cups with it to three-quarters of their height.
- Set a half peach poached in vanilla syrup on the ice in each cup.
- Cover with a little veil of spun sugar.
