Croûte Dorée, or Pain Perdu (Sweet Fried Bread Slices)

Ingredients
- brioche
- sweetened vanilla-flavoured milk
- eggs
- clarified butter
- vanilla sugar
Instructions
- Cut slices one centimetre thick from a brioche or from stale bread.
- Soak the slices in cold sweetened vanilla-flavoured milk.
- Beat the eggs as for an omelette, sweeten them lightly, and dip the soaked slices in them.
- Arrange the slices in a pan of very hot clarified butter and colour them on both sides.
- Drain the slices, dress them on a napkin and dust with vanilla sugar.
