Croûte Dorée, or Pain Perdu (Sweet Fried Bread Slices)

Ingredients

Instructions

  1. Cut slices one centimetre thick from a brioche or from stale bread.
  2. Soak the slices in cold sweetened vanilla-flavoured milk.
  3. Beat the eggs as for an omelette, sweeten them lightly, and dip the soaked slices in them.
  4. Arrange the slices in a pan of very hot clarified butter and colour them on both sides.
  5. Drain the slices, dress them on a napkin and dust with vanilla sugar.
