- Chicken forcemeat with tomato
- Tortellini
- Fine pasta
Instructions
- Pipe small quenelles of tomato-flavoured chicken forcemeat in the shape of pearls.
- Poach the tortellini.
- Poach a small quantity of fine pasta in the Consommé.
- Garnish the clear chicken Consommé with the quenelles, the tortellini and the pasta.
