Pork Chops à la Grand'Mère

Ingredients
- pork chops
- 100 grammes butter
- half an onion
- 1 egg
- a strong pinch of salt
- a little pepper
- a little nutmeg
- caul
- melted butter
- potato purée
Instructions
- Bone the chops, keeping the bones, and chop the meat.
- To each pound of chopped meat add 100 grammes of butter, half a chopped onion cooked in butter, one egg, a strong pinch of salt, a little pepper and a little nutmeg.
- Re-form the chops with this mixture, fitting a bone into each one.
- Wrap each chop in caul.
- Sprinkle them with melted butter and grill them gently.
- Dish them in a ring and serve a potato purée separately.
