Pork Chops à la Grand'Mère

Instructions

  1. Bone the chops, keeping the bones, and chop the meat.
  2. To each pound of chopped meat add 100 grammes of butter, half a chopped onion cooked in butter, one egg, a strong pinch of salt, a little pepper and a little nutmeg.
  3. Re-form the chops with this mixture, fitting a bone into each one.
  4. Wrap each chop in caul.
  5. Sprinkle them with melted butter and grill them gently.
  6. Dish them in a ring and serve a potato purée separately.
