Omelette Célestine (Sweet Filled Omelette)

Instructions

  1. Make an omelette of 2 eggs and fill it with cream, marmalade or jam.
  2. Make a second, slightly larger omelette and fill it with a different one of these.
  3. Lay the first omelette inside the second and roll it as usual.
  4. Dust with icing sugar and glaze with a red-hot iron or in the oven.
