Consommé Mosaïque (Petite Marmite Consommé with Mosaic-Decorated Chicken Pain)

Instructions

  1. Prepare a Consommé de la Petite Marmite.
  2. Poach a pain of chicken kept a little firm, cool it, and cut it as desired into squares, rectangles, rounds, ovals and so on.
  3. Mask one surface of each piece with a light coat of cooked chicken purée.
  4. Form the mosaic on that surface with minute squares of royales of various tints, barely 6 millimetres to the side, setting the tints against one another.
  5. Garnish the Consommé with the decorated pieces.
