Pike Fillets à la Régence

Ingredients

Instructions

  1. Cut the pike fillets to the size of a double escalope and of oval shape.
  2. Skin them and inlay them with truffles.
  3. Poach them on a richly buttered tray or in a sauté-pan with white wine and fish cooking liquor, basting from time to time.
  4. Glaze them at the last moment.
  5. Dish up in a crown.
  6. Arrange a Régence garnish A in the middle.
  7. Surround with small trussed crayfish cooked in court-bouillon.
