Ingredients

Instructions

  1. Put the sifted flour, the pinch of salt, the oil or melted butter and about 2 décilitres of barely lukewarm water into an earthenware bowl.
  2. Mix by lifting with the spoon; if the batter is to be used at once do not work it, or it will become elastic and will not cling to what is dipped in it.
  3. If it is made in advance it may be worked, since resting takes the elasticity out of it.
  4. At the moment of using, fold in the 2 egg whites beaten to a snow.
