Frying Batter for Brain and Soft-Roe Fritters, Fritots, etc.
Origin: Paris, France
Source: Auguste Escoffier, 1907
Ingredients
- 125 grammes sifted flour
- a pinch of salt
- 2 spoonfuls oil or melted butter
- about 2 décilitres barely lukewarm water
- 2 egg whites
Instructions
- Put the sifted flour, the pinch of salt, the oil or melted butter and about 2 décilitres of barely lukewarm water into an earthenware bowl.
- Mix by lifting with the spoon; if the batter is to be used at once do not work it, or it will become elastic and will not cling to what is dipped in it.
- If it is made in advance it may be worked, since resting takes the elasticity out of it.
- At the moment of using, fold in the 2 egg whites beaten to a snow.
