- fresh pea purée

Instructions
- Prepare a Royale of fresh pea purée and poach it in dariole moulds.
- Cut the Royale into rounds.
- Cut chicken fillets, truffle and mushrooms into julienne.
- Garnish the clear Consommé de volaille with the Royale rounds and the julienne.
