- Chicken forcemeat

Instructions
- Prepare a clear chicken Consommé.
- Cut the vegetables into a brunoise.
- Mould quenelles of chicken forcemeat with a dessert spoon and fill them with the brunoise.
- Garnish the Consommé with the quenelles, the peas and chervil pluches.
