Salade Régence (Truffle, Cocks' Kidney and Asparagus Salad)

Ingredients
- raw truffles (equal part)
- cocks' kidneys (equal part)
- celery (equal part)
- asparagus tips (equal part)
- oil
- lemon juice
Instructions
- Cut the raw truffles into thin shavings.
- Slice the cocks' kidneys.
- Cut the celery lengthwise, exceedingly thin.
- Combine in equal parts with the asparagus tips.
- Season very sharply with oil and lemon juice.
