Roux Blond (Blond Roux — for 1 kilo)

Origin: Paris, France

Source: Auguste Escoffier, 1907

Ingredients

Instructions

  1. Use butter alone, not fat, since the dépouillement of the sauces this roux binds is far shorter than that of the brown sauces.
  2. Cook the flour in the butter very gently.
  3. Stop the cooking as soon as the roux has taken a lightly blond tint.
