  1. Colour the chicken in butter in a sauté pan.
  2. Lightly brown the potatoes in butter, then add them to the chicken.
  3. Finish the cooking in the oven.
  4. Dress the chicken with the potatoes around it, arranged in bouquets.
  5. Deglaze the sauté pan with white wine and add a spoonful of fonds de veau.
  6. Pour over the chicken and sprinkle with a pinch of chopped parsley.
