Filets de Harengs (Smoked Herring Fillets with Soft-Roe Mayonnaise)

Ingredients
- fillets of smoked herring
- milk
- Mayonnaise — two thirds of the sauce
- purée of soft roes — one third of the sauce
- vinegar
- Cayenne
- onion
- parsley
- chervil
- celery
- chive
- tarragon
Instructions
- Skin and trim the smoked herring fillets, keeping them quite whole; desalt them in milk if there is cause.
- Mix two thirds Mayonnaise with one third purée of soft roes.
- Loosen the sauce with vinegar and sharpen it with Cayenne.
- Finely chop the onion, parsley, chervil, celery, chive and tarragon, in roughly equal quantity, and add them to the sauce.
- Dress the fillets and mask them with the sauce.
