Filets de Harengs (Smoked Herring Fillets with Soft-Roe Mayonnaise)

Ingredients

Instructions

  1. Skin and trim the smoked herring fillets, keeping them quite whole; desalt them in milk if there is cause.
  2. Mix two thirds Mayonnaise with one third purée of soft roes.
  3. Loosen the sauce with vinegar and sharpen it with Cayenne.
  4. Finely chop the onion, parsley, chervil, celery, chive and tarragon, in roughly equal quantity, and add them to the sauce.
  5. Dress the fillets and mask them with the sauce.
