Harengs en Papillotes (Herrings in Papillotes)

Ingredients

  1. Fry 1 finely chopped onion in butter.
  2. Add twice its volume of rye breadcrumbs, pepper, nutmeg and 2 décilitres of sauce Allemande.
  3. Cook this appareil for 5 minutes.
  4. Cut the fillets of 3 soaked salt herrings into dice, reserving the heads and tails, and mix them into the appareil.
  5. Let it cool, then divide it into portions the size of a herring.
  6. Shape each portion into the form of a herring on a buttered baking sheet, putting back the heads and tails.
  7. Pass into the oven to colour.
  8. Put each into an oiled papillote made for the purpose, and make it puff up at the last moment.
