Harengs en Papillotes (Herrings in Papillotes)

Ingredients
- 1 onion
- Butter
- Rye breadcrumbs
- Pepper
- Nutmeg
- 2 décilitres sauce Allemande
- 3 soaked salt herrings
- Butter
- Oil
Instructions
- Fry 1 finely chopped onion in butter.
- Add twice its volume of rye breadcrumbs, pepper, nutmeg and 2 décilitres of sauce Allemande.
- Cook this appareil for 5 minutes.
- Cut the fillets of 3 soaked salt herrings into dice, reserving the heads and tails, and mix them into the appareil.
- Let it cool, then divide it into portions the size of a herring.
- Shape each portion into the form of a herring on a buttered baking sheet, putting back the heads and tails.
- Pass into the oven to colour.
- Put each into an oiled papillote made for the purpose, and make it puff up at the last moment.
