Melon frappé (Iced Melon Filled with Granité)

Instructions

  1. Free the pulp of one melon of all rind, seeds and filaments, pass it through a sieve and prepare a Granité with it.
  2. Cut round the second melon at the stalk end and open it; remove the seeds and filaments entirely.
  3. With a silver spoon, detach the pulp in pieces and set it to macerate on ice with a little sugar and a wine or liqueur — Port, Curaçao, Rum, Kirsch or Maraschino.
  4. Keep the emptied rind one hour in an iced cooler.
  5. At serving, set the emptied melon on a small block of ice cut as desired.
  6. Fill it with the Granité and the macerated pulp in alternating layers, then close it with the piece removed.
