Melon frappé (Iced Melon Filled with Granité)

Ingredients
- 2 medium melons
- A little sugar
- Wine or liqueur — Port
- Granité (made from the pulp of one melon)
Instructions
- Free the pulp of one melon of all rind, seeds and filaments, pass it through a sieve and prepare a Granité with it.
- Cut round the second melon at the stalk end and open it; remove the seeds and filaments entirely.
- With a silver spoon, detach the pulp in pieces and set it to macerate on ice with a little sugar and a wine or liqueur — Port, Curaçao, Rum, Kirsch or Maraschino.
- Keep the emptied rind one hour in an iced cooler.
- At serving, set the emptied melon on a small block of ice cut as desired.
- Fill it with the Granité and the macerated pulp in alternating layers, then close it with the piece removed.
