Sole à l'Espagnole (Sole with Tomatoes, Peppers and Fried Onion Rings)

Ingredients

Instructions

  1. Season the sole, pass it through flour and cook it à la Meunière with oil.
  2. Press, peel, chop and season 3 medium tomatoes, then sauté them in oil.
  3. Spread the tomatoes on the serving dish and lay the sole on top.
  4. Cut peppers into julienne and fry them; set a bouquet at each end of the dish.
  5. Season onion rings, flour them and fry them in oil; arrange them on each side of the sole.
