Poulet sauté à la Marseillaise (Sautéed Chicken with Garlic, Green Pimentos and Tomatoes)

Ingredients
- chicken
- oil
- 2 cloves of garlic
- 100 grammes green pimentos
- 3 small tomatoes
- 1 decilitre white wine
- a dash of lemon juice
- a pinch of coarsely chopped parsley
Instructions
- Sauté the chicken in oil.
- Sauté in oil the crushed garlic, the shredded green pimentos and the quartered small tomatoes.
- When the chicken is half cooked, add this garnish to it and finish cooking.
- Drain off the oil; deglaze with the white wine and a dash of lemon juice, and reduce almost entirely.
- Dress the chicken, cover it with the garnish and sprinkle with a pinch of coarsely chopped parsley.
