Instructions

  1. Sauté the chicken in oil.
  2. Sauté in oil the crushed garlic, the shredded green pimentos and the quartered small tomatoes.
  3. When the chicken is half cooked, add this garnish to it and finish cooking.
  4. Drain off the oil; deglaze with the white wine and a dash of lemon juice, and reduce almost entirely.
  5. Dress the chicken, cover it with the garnish and sprinkle with a pinch of coarsely chopped parsley.
