Croquettes à la Dominicaine (Oyster and Mushroom Croquettes)

Ingredients

Instructions

  1. Poach 100 oysters and reserve their liquor.
  2. Cut mushrooms in dice to half the weight of the oysters.
  3. Combine the oysters and mushrooms with 2 1/2 decilitres of sauce Béchamel to which one-third of reduced Soubise has been added.
  4. Finish the mixture with Beurre de homard and heighten it with Cayenne.
  5. Shape into croquettes in the form of an elongated oval and finish them following the general croquette formula.
  6. Serve with Sauce Vin blanc into which the reduced oyster liquor has been added.
