Croquettes à la Dominicaine (Oyster and Mushroom Croquettes)

Ingredients
- 100 poached oysters
- Mushrooms cut in dice
- 2 1/2 decilitres sauce Béchamel
- Reduced Soubise
- Beurre de homard
- Cayenne
- Sauce Vin blanc
- Oyster liquor
Instructions
- Poach 100 oysters and reserve their liquor.
- Cut mushrooms in dice to half the weight of the oysters.
- Combine the oysters and mushrooms with 2 1/2 decilitres of sauce Béchamel to which one-third of reduced Soubise has been added.
- Finish the mixture with Beurre de homard and heighten it with Cayenne.
- Shape into croquettes in the form of an elongated oval and finish them following the general croquette formula.
- Serve with Sauce Vin blanc into which the reduced oyster liquor has been added.
