Omelette à la Forestière (Omelette with Morels and Bacon)

Instructions

  1. Cut 3 of the finest morels in half and slice the rest.
  2. Sauté the morels in butter and set the 6 halves aside.
  3. Bind the sliced morels with a thread of glace de viande.
  4. Sauté 40 grammes of blanched diced lean bacon in the pan.
  5. Pour the eggs into the pan and make the omelette.
  6. Fill it with the bound morels combined with a pinch of chopped parsley.
  7. Arrange the 6 reserved morel halves in a line on the omelette and surround it with a ribbon of jus lié.
