Fritot de Raie (Marinated Fried Skate)

Ingredients
- small skate (raitons)
- salt
- pepper
- lemon juice
- oil
- onion
- thyme
- bay leaf
- parsley stalks
- light frying batter
- flour
- fat for deep frying
- parsley
Instructions
- Use by preference quite small skate, called raitons.
- Detach the wings, remove the skin and cut them into pieces.
- Marinate the pieces for 3 hours with salt, pepper, lemon juice, oil, thin rings of onion, thyme, bay leaf and parsley stalks.
- When the time comes, dip the pieces in a light frying batter and fry them in plenty of hot fat.
- Pass the onion rings from the marinade through flour and fry them.
- Dress on a napkin, with fried parsley on one side and the fried onion rings on the other.
