Ingredients
- Clear chicken Consommé
- Royale Crécy
- Royale of green pea purée
- Royale à la crème
- Royale of hard-boiled egg yolk purée
Instructions
- Prepare a clear chicken Consommé.
- Make royales of various colours: Crécy (red), green pea purée (green), à la crème (white) and hard-boiled egg yolk purée (yellow).
- Cut the royales into very small dice and garnish the Consommé with them.
