Poulet sauté aux Morilles (Sautéed Chicken with Morels)

Instructions

  1. Sauté the chicken in butter.
  2. At two-thirds of its cooking, add the morels stewed in butter.
  3. Finish cooking in the oven, covered, and dress the chicken with the morels on top.
  4. Deglaze with the cognac.
  5. Add the juice of the morels and the glace de viande, and reduce to a decilitre.
  6. Off the fire, complete with the 50 grammes of butter and pour over the chicken.
