Sauce aux Œufs à l'Anglaise (Eggs Sauce)

Ingredients
- 60 grammes butter
- 30 grammes flour
- 1 half-litre boiling milk
- salt
- white pepper
- a little nutmeg
- 3 hard-boiled eggs
Instructions
- Prepare a white roux with the butter and the flour.
- Slake it with the boiling milk.
- Season with salt, white pepper and a little nutmeg.
- Bring to the boil and cook gently for 5 to 6 minutes.
- Add the hot hard-boiled eggs, white and yolk, cut in dice.
