Instructions
- Prepare the peas as Petits pois au Beurre or as Petits pois à la Française, adding to them the necessary number of blanched and tied lettuces.
- Dress in a timbale.
- Cut the lettuces in two or in four, trim them, and arrange them on top in a cross or in a crown.
