Instructions
- Thicken the chicken Consommé lightly with tapioca.
- Cut a pain de volaille au Velouté into medium rounds.
- Cut the cockscombs and cock's kidneys into escalopes.
- Garnish the Consommé with the rounds of pain de volaille, the cockscombs and kidneys, the fine green peas and the chervil pluches.
