Tivoli aux fraises (Strawberry Bavarois Set in Kirsch Jelly)

Ingredients
- kirsch jelly
- Bavarois composition
- wild strawberry purée
Instructions
- Line a fancy mould with a central funnel with a thick layer of quite clear kirsch jelly.
- Fill the mould with a Bavarois composition strongly enriched with wild strawberry purée, and let it set.
- Turn out at the moment and surround with chopped, quite clear kirsch jelly.
