Consommé à la Portugaise (Cold Tomato Consommé)

Ingredients

• Consommé
• Purée of raw
• Tomato water

Instructions

1. Add 2 decilitres of purée of raw, well-red tomatoes and 1 decilitre of tomato water per litre of Consommé.
2. Cook covered for 20 minutes, without letting it boil.
3. Pass through the muslin with very gentle pressure.
4. Serve very cold.
