Potage Hongrois (Hungarian Soup)

Ingredients
- 400 grammes sirloin
- butter
- 1 large onion
- a pinch of Paprika
- a small pinch of fine salt
- 3 grammes kummel (caraway)
- crushed garlic
- 15 grammes flour
- 1 litre and three-quarters ordinary Consommé
- 2 medium Holland potatoes
- 2 spoonfuls small croûtons in dice
Instructions
- Fry the diced sirloin in butter with the large chopped onion.
- Season with Paprika, a small pinch of fine salt, 3 grammes of kummel and crushed garlic the size of a small bean.
- Sprinkle with 15 grammes of flour and cook it for an instant.
- Moisten with 1 litre and three-quarters of ordinary Consommé.
- Bring to the boil, then cook very gently.
- After an hour, add the diced Holland potatoes.
- Cook very slowly for three hours and a half in all.
- On serving, complete with 2 spoonfuls of small diced croûtons fried in butter.
