Potage Hongrois (Hungarian Soup)

Ingredients

Instructions

  1. Fry the diced sirloin in butter with the large chopped onion.
  2. Season with Paprika, a small pinch of fine salt, 3 grammes of kummel and crushed garlic the size of a small bean.
  3. Sprinkle with 15 grammes of flour and cook it for an instant.
  4. Moisten with 1 litre and three-quarters of ordinary Consommé.
  5. Bring to the boil, then cook very gently.
  6. After an hour, add the diced Holland potatoes.
  7. Cook very slowly for three hours and a half in all.
  8. On serving, complete with 2 spoonfuls of small diced croûtons fried in butter.
