Cromesquis d'Amourettes à la Polonaise (Fritters of Beef Marrow, Polish Style)

Ingredients
- amourettes (spinal marrow)
- cèpes
- truffles
- reduced sauce Espagnole
- very thin unsweetened pancakes
- light frying batter
- fried parsley
- sauce Fines herbes or sauce Duxelles
Instructions
- Prepare a salpicon of amourettes, cèpes and truffles, bound with reduced sauce Espagnole, in the ordinary proportions of the Croquettes.
- Shape the mixture into rectangles.
- Wrap each rectangle in a very thin pancake made from an unsweetened batter.
- Dip the wrapped cromesquis in a light frying batter and fry them in a large quantity of hot frying fat.
- Dish on a napkin with a bouquet of fried parsley, and serve a sauce Fines herbes or a sauce Duxelles separately.
