Cromesquis d'Amourettes à la Polonaise (Fritters of Beef Marrow, Polish Style)

Instructions

  1. Prepare a salpicon of amourettes, cèpes and truffles, bound with reduced sauce Espagnole, in the ordinary proportions of the Croquettes.
  2. Shape the mixture into rectangles.
  3. Wrap each rectangle in a very thin pancake made from an unsweetened batter.
  4. Dip the wrapped cromesquis in a light frying batter and fry them in a large quantity of hot frying fat.
  5. Dish on a napkin with a bouquet of fried parsley, and serve a sauce Fines herbes or a sauce Duxelles separately.
