Consommé à la Villeneuve (Clear Chicken Consommé with Stuffed Lettuce and Ham Pancakes)

Ingredients

• Clear chicken Consommé
• Lettuces
• Chicken forcemeat
• Scarlet tongue
• Pancakes
• Ham forcemeat
• Ordinary royale

Instructions

1. Prepare a clear chicken Consommé.
2. Add chopped scarlet tongue to the chicken forcemeat and stuff the lettuces with it.
3. Braise the lettuces and cut them into small quarters.
4. Mask rectangles of pancake with a fine layer of ham forcemeat and pass them for a moment at the mouth of the oven to poach the forcemeat.
5. Cut ordinary royale into pastilles.
6. Garnish the Consommé with the lettuce quarters, the pancake rectangles and the royale pastilles.
