Sauce Pauvre Homme (Poor Man's Sauce)

Ingredients
- 75 grammes brown roux
- three quarters of a litre ordinary consommé
- 4 spoonfuls gherkin vinegar
- 3 or 4 shallots
- 1 spoonful parsley
- 1 and a half spoonfuls chopped chives
- 3 spoonfuls golden breadcrumbs
- 1 large pinch pepper
Instructions
- Combine the brown roux with the consommé or brown stock and the gherkin vinegar.
- Let it cook for 7 to 8 minutes.
- Off the fire, finish with the blanched shallots, the parsley, the chives, the breadcrumbs and the pepper.
