Lapwing Eggs à la Moderne (Cold)

Ingredients

Instructions

  1. Line dariole moulds with jelly and line them in fine chartreuse fashion.
  2. Place an egg in each mould, head downwards.
  3. Finish filling with jelly and let it set.
  4. Unmould them.
  5. Bind a macédoine of vegetables with Mayonnaise and set it in a dome on the dish.
  6. Arrange the eggs in a crown around it.
