Instructions
- Prepare a clear chicken Consommé.
- Mould quenelles of chicken forcemeat with a small spoon.
- Braise the small lettuces and trim them.
- Garnish the Consommé with the quenelles, the lettuces, the peas kept well green, and chervil pluches.
